Les Trois-Epis is perched high above the Rhine plain in the heart of my birthplace, Alsace France. It is a medieval town surrounded by an ancient forest that is home to wild boar, deer and the traditional smaller game animals that we have hunted for centuries.
Since 1491, when the Virgin Mary appeared to a blacksmith Thierry Schoere holding three ears of corn, Trois-Epis has also been a place of pilgrimage and a home to a number of ancient religious orders.
This is the setting in which my brother and I are refurbishing a 600-year-old monastery into a boutique inn and gourmet cooking school. As you can see from the pictures there is a lot of work to do to lovingly transform these abandoned buildings into an inn that has the comforts of the 21st century while still respecting its long and pious history.
